Ok so I started back on the low carb diet yesterday. My sister and her bf just got back a few minutes ago and bring cupcakes that they got from a really nice bakery in Beverly Hills. One is especially for me. Lol

I'm wondering if red velvet cakes are more of a southern thing since I've been around them all my life. My grandmother made one every Christmas and Thanksgiving, along with seven-up cake or cream cheese pound cake.

Now my AUnt always brought her butternut cake and then there was always a lane cake and a german chocolate cake. Then there were the pecan  and sweet potato pies.....

I can't say that I've ever had a red velvet cake. I really really want to go to culinary school.

 



My sister's bf is looking into culinary school. I have a feeling he will specialize in baking. He is always bringing pastries that I have to resist!

I think red velvet must be a southern thing. I remember in the movie Steel Magnolias when someone made a red velvet cake in the shape of an armadillo. That's the only time I've ever seen red velvet cake. laughing.gif

Lemon cake

1 package yellow cake mix (must call for oil)
3 eggs (if recipe on mix box calls for 2, add one)
2 lemons (3 if smaller)
2 c. powdered sugar
1 package (3 oz.) lemon jell-o

To cake mix, add extra egg, if needed, and lemon jell-o.  Cook as directed on box.  When the cake is still warm poke holes all over.  Spoon glaze over cake.

To make glaze: Juice the lemons and mix with the powdered sugar.



Pink lemonade pie

1 container pink lemonade concentrate, thawed
2 cans Eagle sweetened condensed milk
1 container cool whip
A few drops red food coloring

Mix together pink lemonade and milk.  Fold in almost the entire container of cool whip.  Add food coloring.  Pour into graham cracker crust.  Top with crushed graham crackers.


Graham cracker crust

1 package (1/4 box) graham crackers
6 Tbsp. butter, melted
6 Tbsp. sugar

Crush graham crackers between two sheets of wax paper.  Mix sugar into melted butter.  Add graham crackers.  Press into pie pan.

I know a lot of people who don't like it.  They try it and it's too tart for them.  I love it though.
